Some others refrigerate potatoes for a month or more, as the refrigeration process naturally increases sugar content (we didn’t know that either!).

How Do Dark Potato Chips Taste?

As you can imagine, potato chip companies go through thousands of pounds of potatoes daily.  Every once in a while, a few potatoes higher in sugar content get mixed in …

The end result from these “higher sugar potatoes” is that a few dark chips end up in bags of regular chips.  Because these chips offer a unique, “well done” flavor, they became prized by chip eaters.  Finding a few dark chips in a bag of regular chips was like finding buried treasure!
